Baked Chicken

It’s been this cold here.

This is a picture of the biggest, brightest sun dogs I’ve ever seen (that’s the sun on the right) that I took yesterday morning.

The temperature at our house this morning was -11 degrees F and the cold is supposed to stay thru the weekend and into next week.

Now would be a great time to try this recipe – another one under the “comfort food” category.

One of my daughters suggested that I do more of Grandma’s savory recipes instead of all of her sweet recipes.

I will try to sprinkle a few here and there but the fact is – there are 4 times as many sweet recipes as savory.

So here is one of the savory recipes.

Baked Chicken is a quintessential church cookbook type dish.

So fast, so easy, and three kinds of cream of something soup.

This is also a quick and easy dinner for this busy time of year.

Maybe this would be a good recipe to try this weekend – it gives you plenty of time to wrap presents and decorate!

You even get a bonus recipe on the back of the card – another recipe for a little different kind of baked chicken.

Here is the (first) recipe as I made it:

Baked Chicken

Put in a 9″ x 13″ cake pan.

Mix:

1 1/4 cup Minute Rice

1/4 cup melted butter (I wouldn’t use this next time – it’s really not needed – I might try adding a 1/2 cup of milk instead)

1 can cream of chicken soup

1 can cream of celery soup

1 can cream of mushroom soup

Put in cake pan and put cut up chicken on top.

Sprinkle with seasoning salt and pepper.

Bake at 300 degrees for 3 hours.

I used a whole cut up fryer for this recipe.

The chicken got nice and brown – I wasn’t sure it would – and the rice was nice and creamy.

This is a very fast and very easy dinner recipe.

I did this on a weekend, put it in the oven, and got on with our afternoon.

Dinner was ready – no fuss, no muss.

The chicken turned out very moist and tender.

My family all loved it.
