Grandma's Recipes One By One!

Pistachio Salad

Today’s recipe was a staple at all family gatherings. This salad brings back a lot of memories from my childhood. We had this a lot at home, at picnics, at graduations, at family dinners, you name it. It comes from one of grandma’s sisters but it looks like she got it originally from Grandma and one other sister. Pistachio Salad was a very popular recipe.

A - Pistachio Salad

This is again – so fast and so good!

Here is the recipe as I made it:

Pistachio Salad

Mix one small box of pistachio pudding with one entire 16 ounce can of crushed pineapple in juice (not heavy syrup).

Add 1/2 cup chopped nuts (I used pecans) and 1 cup mini marshmallows.

Fold in 1 pint of stiffly whipped cream.

That’s it.

Done.

The mixture is a wild color of green before it’s all mixed in.

Once you add the whipped cream, things mellow a bit.

I know that back in the day, there was Cool Whip used.

You could use a small tub of that instead of whipped cream.

I wouldn’t.

This salad is really delicious.

It’s easy.

It’s creamy.

It’s chock full of memories.
