Today’s recipe for Turkey Breakfast Sausage Patties is one my family has been using for quite awhile. We usually use pork in these, but in an effort to be a bit healthier, I tried making them with ground turkey instead of ground pork. Breakfast sandwiches are a big thing in our house (my husband is famous for his egg sandwiches with his making everyone in the family their own special kind), so I’m glad I finally tried this with the turkey – it might be a game changer! Lots of flavor and less fat – that’s what I’m hoping!
Here is the recipe as I made it:
Turkey Breakfast Sausage Patties
Put into a large bowl:
1 pound of ground turkey (or pork – and this doubles or triples nicely)
Add:
2 heaping teaspoons brown sugar
1 teaspoon salt
1 teaspoon black pepper
2 teaspoons dried sage
1 teaspoon dried thyme
1/4 teaspoon red pepper flakes
1/4 teaspoons cayenne pepper
1/4 teaspoons nutmeg
Mix well.
Form patties (I got 6 from this batch).
Add 1 Tablespoon olive oil to a large cast iron pan and fry patties.
Drain on paper towel, if necessary.
This was the first time trying ground turkey in this sausage recipe, so I just made 1 pound here. I broke up the turkey a bit, and then in go all those delicious spices. There is no better way to mix this than with your hands. Thinking about it now, I should probably mix the spices together first and then add them to the turkey. I got 6 patties from this pound of ground turkey.
I used my cast iron skillet to fry the patties.
Out of habit I put the patties on a paper towel – with pork this is more necessary, but it really wasn’t necessary with the turkey. This just helps to keep the patties a bit less greasy.
You just HAVE to make an egg sandwich with this breakfast sausage! I also put on a thin slice of cheddar cheese! You make it the way YOU like it!

You can use a bagel, an English muffin, or toast for an egg sandwich with this delicious sausage. It was so good with the turkey – I don’t know why I haven’t tried this before! I’ll be doing it more from now on – and keeping some in the freezer so they’re ready when I need them, and maybe even make some Make Ahead Breakfast Sandwiches with them. The spices make this very flavorful, and for those of us watching our fat intake, these Turkey Breakfast Sausage Patties could be a game-changer!
