Rhubarb Pie

I can’t believe how much rhubarb I’ve had in the garden this year. Maybe it’s because of the winter weather. I don’t know but I love it! Our winter was like one from the old days with a lot of temps below zero, lots of snow, and it was LONG. This recipe looks like one from the old days, too, and could be from the time of this picture of Grandma and two of her sisters. Grandma is the one on the left. It says something on the back of the picture about being a bunch of “hens” but I think they look pretty sharp in their best outfits. For some reason I think the dress Grandma has on is the one she word for her confirmation. Might have to ask Mom about that.

The rhubarb recipe for this week is Rhubarb Pie. This recipe is so simple and so easy and has so few ingredients, that I feel like it should be a part of everyone’s repertoire. They didn’t mess around in the old days. There was so much to do, you just had to get this stuff done, and you had to use the seasonal ingredients when they came. Rhubarb is definitely seasonal right now!!!

Rhubarb Pie

This pie is chock full of fruit/vegetable – however you want to look at it!

Here is the recipe as I made it:

Rhubarb Pie

You will need one pie crust and you can find a recipe for that on a previous post here.

Sift together:

3 Tablespoons all-purpose flour

1 cup white sugar

Mix in:

2 cups rhubarb, diced

1 egg, beaten

Bake at 450 degrees for 10 minutes, then turn the oven down to 350 degrees and bake for another 35 minutes.

I didn’t really think that one egg was going to moisten the ingredients enough, but it did!

My son made his first pies for Thanksgiving and he had one crust leftover so he wrapped it well and put it in the freezer.

It held up wonderfully (he did a beautiful job) and I used it for this pie.

There was no mention of meringue in this recipe so I used whipped cream.

I think ice cream would be an excellent choice for this also.

This is such a simple pie, and so easy.
